Without a living blossom or the sound of a musical instrument, our actual number system intrinsically contains the objects of our observations of the natural environment and beyond and is capable of reproducing phenomena in all of its complexity. How did this come about? Are we observing an objective reality or are we projecting our own sense organs and perceptual experience onto our world?

Simply put, your dichotomy is false. Both possibilities are inevitably true. We find ourselves somewhere with only the tools at hand to know anything about it. We may be the five blind men feeling the elephant, but we are the five blind men feeling he elephant. There is a third gating factor as well that you didn't mention--language. Languge as well limits and enables the knowing.
