1. What should a proper Yorkshire be like? Light is the optimum word here – light as in airy but also as in crisp. There should be a light, crisp crunchiness on the outside but with a hint of soft squidginess within. All very difficult, you might be thinking, but that's not so, because once you've got the right recipe and, most importantly, the right tin to make it in, and have carefully read and followed these instructions, you'll never have a failure – and that's a promise! 2. To make a Yorkshire pudding to serve six to eight people, you will need a roasting tin measuring 12 x 10 inches (30 x 25 cm) with a solid base (it needs to be solid enough to be placed over direct heat – a vital part of the whole technique). Begin by placing a sieve over a large mixing bowl, then sift in 6 oz (175 g) plain flour, holding the sieve up high to give the flour a good airing as it goes down into the bowl. Don't fall into the trap of thinking that self-raising flour will give more spectacular results – it won't. Plain flour is much better. 3. Now, with the back of a tablespoon, make a well in the centre of the flour and break 2 large eggs into it. Add a pinch of salt and some freshly milled black pepper. Measure 6 fl oz (175 ml) milk and 4 fl oz (110 ml) water into a measuring jug. 4. Then begin to whisk the eggs with an electric whisk and, as you beat them, the flour around the edges will be slowly incorporated. 5. When the mixture becomes stiff simply add the milk and water mix gradually, keeping the whisk going. 6. Stop just before the end and scrape the sides of the bowl with a spatula so that any lumps can be pushed down into the batter, then whisk again until all is smooth. Now the batter is ready for use and although it's been rumoured that batter left to stand is better, I have discovered no foundation for this – so just make it whenever it's convenient. 7. To cook Yorkshire pudding – remember, keep everything hot: hot oven, hot tin, hot fat and don't forget good oven gloves to protect your hands. Remove the meat from the oven (or if it's not ready, place it on a lower shelf) and turn the oven up to gas mark 7, 425°F (220°C). Spoon 2 tablespoons of beef fat into the Yorkshire pudding tin and allow it to pre-heat in the oven. 8. When the oven is up to temperature, remove the tin with your gloves on and place it over direct heat (turned to medium). Then, when the fat begins to shimmer and smoke a little, pour in the batter. Tip it evenly all round and then place the tin on a high shelf in the oven and cook the Yorkshire pudding for 40 minutes or until golden brown and crisp. 9. Serve it cut into squares presto pronto! Yorkshire pudding doesn't like waiting around – it can become soggy. Try to arrange things so that it is taken from the oven just as everyone is sitting down to eat. Well its been the first day of my new job, and its been good. Going to be very different to what I have done before. The IT stuff will carry on, but the biggest problem is the fact that another job interview outcome will be landing on my desk very soon as well. So I will have to make a choice, something that I really did not want to do. The other job has a company car and pays more money, but is more work and stressfull. Or do I stick with my first choice and have a fairly easy time of it? I also really hate letting people down, I just find it really hard to do. Maybe I should be thinking more about me and less about everybody else? I will have to decide when the offer letter arrives I guess. Well I am on my first time on to the scales, and I now have a starting figure from which to work with. Hopefully going to be breaking it down into weeks which will help with the monthly figures etc etc.....Just for now the diet is mainly cutting back on the amount of fatty foods that I eat, along with the amount of food as well. I tried today on my day off, not to spend any money. Now I know I could have stopped in and watched TV etc, but part of the test was to go somewhere and spend the day out and about. I could only spend money to stop me feeling hungry etc. The lowest amount of money that I could spend in 24hrs would be my overall aim. It was an idea that my mum came up with, as she works for a homeless charity and it’s a really good way of showing how money affects daily life. Well I got around the shopping centre and had a can of coke and a ham salad sandwich for breakfast, lunch and tea! I max I spent in 24hrs was £2.30. And this leads me to the main reason that I decided to blog this today, and that is the fact in today’s modern life it is very hard not to spend any money at all. Everywhere that you go requires some thing to be paid, sometimes its just simple things like paying for parking or that must have DVD or item of clothing. But everybody wants some money of you, and it’s only when you go to a big city that you realise how much that you have to pay. The only reason for this is the fact that the normal “bills” are bigger and therefore you notice them more. Anyway I have now decided to think more about money and the way that I spend it, in my daily life. No longer will I just buy that DVD, nor have that latté. I will call out and repair any PC problems anywhere in the world for £15 per hour plus travel costs. PM me your problems and we can take it from there. If you want anything extra that’s charged at £30 per hour! On the plus side I do bill per minute so in most cases the charges aren’t that high. Well todays blog is all about people who say that they know about IT stuff! Firstly I have a IT job, been doing this for a living for many years now. I don't pretend to know it all, as I am learning new stuff everyday. But what really gets my goat up is that some people say that they do know it all!!! I say no way do you know everything, because if you did it would be working now and you wouldn't have asked me to fix it for you, again....lol. Also whats with people downloading "pc fix me tools" Just find the file and delete it, its no that hard really. When I look after my customers I explain why it has gone wrong and what can be done to stop it happening again, and most will do as I ask. Some don't and this is the reason for the blog. One of my customers want his PC on the internet, so he got his free kit from his ISP and followed the installation in the box. It failed totally, so he called the ISP who said it was his PC and not them....lol. So he call some people (two differant PC engineers...yeah right!) out of the local yellow pages. Both took about 6hrs each charged him £100 each and still didn't fix the problem. Then his wife called me, and I came out and fixed it about 30 mins. I charged them 1 hours labour @ £15 per hour, and it was sorted. The main point that I am trying to get across here it that not everybody knows everything in anypart of work or life.
